Ingredients

  • - 250g00 flour
  • - 165ml warmwater
  • - 1 tspinstant yeast
  • - 1 tspsalt
  • - 200g SanMarzano tomatoes, crushed
  • - 150g freshmozzarella, torn
  • - A handful of fresh basil
  • - Extra-virgin olive oil, to finish

Directions

  1. Step 1

    Mix flour, yeast, salt, and water. Knead 8 minutes until smooth.

  2. Step 2

    Cover and rise at room temperature for 4 hours.

  3. Step 3

    Heat the oven to 250°C / 480°F with a steel or stone inside.

  4. Step 4

    Shape the dough into a thin disk. Spread tomatoes.

  5. Step 5

    Bake for 6-8 minutes. Add mozzarella halfway through.

  6. Step 6

    Finish with basil and olive oil. Serve immediately.
